Chimney Park Restaurant & Bar

Windsor's fine-dining restaurant since 2007, in an 1895 building on Main Street. Closed since a kitchen fire in summer 2025; its own site still says so, with reopening promised but not yet dated.

Chef-owner Jason Shaeffer’s restaurant has been the special-occasion table in Windsor since 2007, in a Main Street building from 1895 that was renovated for its fifteenth anniversary in 2022. The kitchen sources local, seasonal and organic products from Colorado and the region; the wine list held a Wine Spectator award every year from 2009 through 2024, and the restaurant carries the DiRoNA award and has twice made OpenTable’s national list. The main room seats 40, the Nook 12, and the whole restaurant can be booked for parties of up to 65.

As of October 2026 the website says the restaurant “remains closed following our kitchen fire this past summer,” with an estimated reopening it had put at summer 2026. Check the site or call before planning on it; reservations, when they resume, are through OpenTable.
